Camazotz is a hand-made raw sugar cane rum produced in the eastern highlands of Oaxaca, Mexico. It shares a similar heritage to Agricole and Cachaca style rums, being very expressive of its raw ingredient - sugar cane, but also the combination of family tradition, ancestral distilling techniques and the region's terroir make Camazotz rum a rare elixir.
Made by Maestro Leoncio Gaspar in the Sierra Mixe, approximately 5 hours NE from the capital and locally known as Aguardiente de Caña, the juice of the sugar cane, grown by the family, without pesticides, is raw pressed by hand, then fermented in open barrels using only wild airborne yeasts. Distilled to proof in small batches of up to 300 ltrs using a traditional alembic copper pot still, the liquid is transported by mules 5km up the mountainside ready for collection. Bottled un-aged with no additional ingredients.
Sip neat at ambient temperature or use as a base for cocktails.

chicagorumramblings review: The aroma is classic for unaged cane juice rum, comprised largely of bitter herbs, fresh cut grass, and cured meat. There’s also a pleasant, natural sweetness that is more pronounced than other cane juice rums I’ve had. On the sip, the natural sweetness, reminiscent of fresh melon and mango, comes to the fore and balances out the vegetal and savory aspects for a smooth but still very complex sip. White pepper and a bit more salinity join right at the end, adding a pleasantly mild spice to the swallow. It’s an imperfect comparison, but this rum really reminds me of a well seasoned skirt streak taco with mango salsa. Although lovely on its own, the flavor profile also makes this a joy to drink with smoky, grilled proteins (brisket and branzino were my choices). Put another way, although this is an excellent sole sipper, it seriously elevates a meal.

Camazotz: The Mexican Bat God of Night, Death and Sacrifice
The legend of Camazotz originated deep in Mexican history as a dangerous cave-dwelling bat creature. A cult following for the creature began amongst the Zapotec Indians of Oaxaca, Mexico. The Zapotecs associated bats with death and the night as they were found inhabiting the caves which ancient Mesoamericans believed was a path to the underworld.
