Description
Caschuín Tequila Blanco Tahona is made in the traditional way with a tahona wheel which they recently reinstated in their distillery. However, this tahona wheel is electric, so no horse or donkey is used to power it! Still, it crushes the cooked agave using the weight of the stone to extract the juices resulting in more complex aromas and flavours than a mechanical shedder would give. It is then fermented with bagasse in ceramic vessels and distilled in a small copper pot. Along with its slightly higher abv, means this tequila is rich with sweet agave flavours and herbal characteristics.

Grover Sanschagrin: 'Has a fun lactic/cheesy thing going on in addition to agave, mushroom, earth and cinnamon aromas. The aroma also shifts and changes in the glass over time as it opens up. Flavour is naturally sweet cooked agave and has some minerals. The finish is short and clean, the minerals are pronounced as the agave sweetness fades. Quite enjoyable and easy to drink. The lactic/cheese aroma is there because the cooked agave spent a good amount of time exposed to air before they were added to the fermentation tank. I love this because it's a sign of a truly natural process and one that can only be achieved through a slow artisanal process. Anyone who thinks that all tequila is the same needs to try this one. I’m also thrilled to see that they installed a tahona and continue to embrace old-school production methods at the Cascahuín distillery. Bravo #cascahuinando!'
Matt Gresham: 'Aroma: Beautiful raw and cooked agave. Some sweet floral notes as well. Taste: Nice mouthfeel, more agave, white pepper, some minerals, eucalyptus. Finish: medium with nice heat and that herbal eucalyptus thing hanging around. This is a really good one and well worth the bump in price over the other blancos from this wonderful distillery!'
Erica Boorom: 'Aroma: Green olive-parmesan cheese, a lactic combo that reminds me of Fortaleza Blanco Still Strength. Minerals and ripe cooked agave are abundant too. Taste: The aromas carry through here with a smaller emphasis on the lactic quality. There's still plenty of cooked agaves, along with some black peppery spice and notes of cinnamon and light fruit. Finish: Carries more of the fruit from the initial taste along with more minerals. The finish is moderately long, and sweeter than the initial spiciness would indicate. Another great expression from Cascahuín.'
