Description
In the far northeast of the Mezcal Denomination of Origin region, mezcal made in Tamaulipas is unique and rarely found outside of Mexico. Two of the agave varietals used, known as Amole (Agave Funkiana and Agave Univittata), are endemic to this state. These small football-sized agave hearts are cooked together with the much larger Agave Americana by Maestro Mezcalero Cuauthemoc Jacques following the traditional method of production, using a horno de tierra (ground oven), natural fermentation with wild yeast in wooden vats, and small-scale distillation in copper pot stills. The flavour profile obtained is like no other mezcal: fresh and mineral, balanced by black forest fruits.
Derrumbes Tamaulipas is an Ensamble of three rare agave, two of which are found only in the state of Tampaulipas. This mezcal is sweet, rich, and dry.
Aroma: citrus, mineral, green pepper, mustard greens, pickle, orange
Palate: cotton candy, orange peel, opening to bell peppers, vegetal umami flavours, oily mouthfeel - long finish with minerality, smoke and apples - A full-flavoured mezcal, with savoury wood smoke complemented by sweet fruit, vegetal notes and a refreshing minerality.

The AgaveFairy: 'Nose: Oh my, that’s characterful and gorgeous. There’s vegetable sweetness, with echoes of baked soft cheeses, nut butter, maple wood, and apricot jam. Such an array of flavours all tied together so well. There are almost some notes of sorghum in a manner that makes me think of a very friendly Baijiu; green peas, and dried mushroom. Palate: Good entry, swells beautifully into complex agave notes that slowly fade with traces of oak smoke, black pepper, and that kinda baked mozzarella thing. The finish seems almost a bit hot as well. This is the magic of Derrumbes. Flavour combinations that we struggle to convey, in balances that grasp us and demand attention. Gorgeous, invigorating spirit. Stunning, truly. A must-try!'
Rakhal: 'I like this a lot. Old leather, bell pepper, burnt orange peel, curry paste, menthol, palm sugar, Sumo mandarins, shrimp paste, fish sauce. Very umami, I’ll be looking out for this batch.'
aarild: 'Orange flowers, some incense I am unable to further describe, subdued smoke and bitter orange peels. Most interesting nose. A bit pepper, quite smooth and good mouthfeel. Overripe cantaloupe, flamed orange peel. Dark chocolate, and a hint of herbs that makes me think about unmalted barley in Irish single pot still whiskey. Actually, I get flavours as if I quaff a Redbreast 15 whilst eating dark orange chocolate.'
