Description
Designed to place over two burners on your stove, so you can heat one end to a hot temperature and the other end to a more moderate temperature. This allows you to place your uncooked tortilla on the hot end for 30 seconds before flipping it onto the cooler end for 45-60seconds, then flip it once more onto the hot end and your tortilla will usually puff.
Not a fancy bit of kit but very handy! Plus you can charr tomatoes, onions and garlic on it for tatemada salsas.
Made of carbon steel and metal handles. Use on gas, electric, induction or in the oven or under the grill.

Storage and Preparation
Preparation and care:
Wash your new carbon steel comal with warm soapy water upon receipt, dry thoroughly. Warm the oven to 90-100℃, put the comal in the oven and allow to warm up. Remove from the oven and apply a thin film of cooking oil (not olive oil, some say flax oil is best) all over the pan: top, bottom and edges. Then buff the oil away with a piece of paper towel, there just needs to be a microscopic layer to season the comal. Turn the oven up to 230℃ and place the comal back in. Keep the pan in there for 2 hours. Then turn off the oven and allow the pan to cool in the oven (most important) for 2 hours until completely cool. There should be a nice sheen to the comal now and it will be non stick. Do not wash with soap and water, but wipe out with a damp cloth after use.
To Use:
Place the comal over 2 burners or elements on your cook surface. Adjust the heat so one end of the comal is medium and and the other end is hot. Start off by placing your tortilla on the hot end for 20-30 seconds or until the tortilla releases itself from the pan, flip and place on the cooler end, cook for 45 seconds or so then flip back onto the hot end and allow the tortilla to puff, you can help it by presses the inflated tortilla with your fingers or a spatula to press the air to the edges. Remove from the pan and place the tortilla in a folded clean tea towel to keep warm while you make others. Stacking the tortillas on top of each other in the folded towel allows them to keep warm and to transfer steam so they become nice and flexible.
You can use your comal on gas, electric, induction and fire.
