Description

An exceptionally clean, yet weighty Tequila, Terralta Blanco is made with mineral-rich water drawn from particularly deep wells for a rich and earthy character. Made with tahona-crushed agave roasted in stone ovens, this bold blanco is delicious on its own, while remaining soft enough to meld beautifully into your cocktail of choice.

Felipe Camarena, maestro tequilero at distillery El Pandillo, comes from a family of distillers. His brother Carlos produces Ocho and his grandfather founded Tapatio. Felipe's dedication to the craft is second to none, he is highly inventive having built his own equipment to his exacting standards, 'Igor' the shredder, 'Felipenstien' the crusher and his two-storey oven which steams his agaves evenly. He is dedicated to being as earth-friendly as possible, harvesting rainwater, planting for biodiversity and neutralizing his tequila vinazas before using it as fertilizer. 

Felipe has three sources of water: spring, rain and deep-well water. The water source for his tequilas is important, he demonstrates through his brands the unique flavour profiles that each water and its minerals give to tequila.

The Jalisco region is famous for its rainy season, and the roof at El Pandillo distillery is a giant rainwater collection system – leading underground to a 53,000-gallon cistern. This allows them to use the rainwater all year round, even during the dry season. Rainwater subtly provides the tequila with that wonderful smell in the air just before it starts to rain- petrichor.

The spring water and deep-well water both have unique characteristics as well. El Pandillo is at a high point in Los Altos, so the water is not affected by agricultural runoff. The spring water has more minerals in the water compared to the rain; it’s well-balanced and naturally alkaline. The deep well at El Pandillo is over 450 feet deep and is earthy, and highly mineralized.

Terralta is made only with deep-well water, and the iron-rich ground in which the agaves are grown produces a tequila that is high in minerality with earthy notes.

    Remy Newland: 'Medium legs. Crisp notes of rich baked agave, pine needles, citrus and dill. Softer notes of vanilla on the nose. Minerals and a faint lactic note. The flavours pop! Liquorice, vanilla, olives, cinnamon and sweet agave are just a few of the highlights. A nice minerality as well. A stand-out tequila.'

    Erica Boomrom: 'Aroma: Cooked agave, earth and minerals predominate. I also get notes of pickle and vanilla. Taste: Cooked agave, earth and minerals. Vanilla and olives. There is some sweetness here but it isn't overpowering in any way. Finish: Long and prolongs the same flavour notes, with a little more emphasis on the earth and minerals. This has lots of great flavours, and the light sweetness works with the earth and minerals to give a nice profile. This is probably my favourite Blanco of the big 3 NOM 1579 brands.'

    Jacob Skoff: 'Cooked agave, herbal, mineral, crush stone, earthy, spring water, rain water, egg plant. Palate: zesty citrus, sweet cooked agave, lime balm, melon, mineral, brine salt. Finish is long with lots of agave.'

    Cool Chile Rating: offering great quality and value for a house pour, Don Felipe's dedication to his craft is inspiring! We like the Terralta Blanco mainly for sipping and but when you feel like a long drink it is economical enough to use in a cocktail.
