Description
Made with mineral-heavy water drawn from particularly deep wells, this Terralta Tequila has a rich, earthy quality, and its time in barrels has allowed the spirit to develop a sweet and fruity profile. Initially some light heat which fades into caramel and leather with a pinch of chocolate. Lemon and apricot notes develop.
Felipe has three sources of water: spring, rain and deep-well water. The water source for his tequilas is important, he demonstrates through his brands the unique flavour profiles that each water and its minerals give to tequila.
The Jalisco region is famous for its rainy season, and the roof at El Pandillo distillery is a giant rainwater collection system – leading underground to a 53,000-gallon cistern. This allows them to use the rainwater all year round, even during the dry season. Rainwater subtly provides the tequila with that wonderful smell in the air just before it starts to rain - petrichor.
The spring water and deep-well water both have unique characteristics as well. El Pandillo is at a high point in Los Altos, so the water is not affected by agricultural runoff. The spring water has more minerals in the water compared to the rain; it’s well-balanced and naturally alkaline. The deep well at El Pandillo is over 450 feet deep and is earthy, and highly mineralized.
Terralta is made only with deep-well water, and the iron-rich ground in which the agaves are grown produces a tequila that is high in minerality with earthy notes. If you like minerality in your tequila this is the brand for you.

Remy Newland: 'Vivacious nose. Ripe full agave notes with floral undertones, spices, ripe peaches, and a touch of pungency. Minerals with a touch of edginess. Flavour: Pepper heat, tons of agave, fruit, vanilla, butterscotch and almond cream. A cider sweetness and light salinity. Finish lingers. I could drink this all night. These guys make outstanding juice!'
Ryan August: 'Aroma: Agave, and a sharp note that reminds me of sourdough bread. Palate: Surprisingly sweet agave, and vanilla bean. Butter, minerals, and citrus. White pepper on the finish. Lingering clove or baking spice note. Verdict: Another stunner from 1579, Terralta might just be the best of the bunch for me. '
