Chile Ancho, Guajillo and Chipotle are the most widely used dried chillies in Mexico being used in many everyday recipes. Use individually or better still, combine them to make rounded, brightly flavoured sauces for popular dishes such as carne con chile, red mole, enchiladas, chilaquiles, and deluxe huevos rancheros.
Chile Ancho 30g (approx. 2) - Heat scale 3/10
Wrinkly, mahogany red ancho chillies have a sweet fruity, earthy flavour.
Chile Chipotle 10g (approx. 3) - Heat scale 7/10
Wrinkly, cranberry red chipotle chillies have a smoky tobacco flavour.
Chile Guajillo 20g (approx. 3) - Heat scale 3/10
Smooth, brick red guajillo chillies have a bright tannic green tea flavour.

Serving Suggestion
Wipe chillies clean, remove their stems, open flat and shake out seeds. To release their flavours: lightly toast on both sides, in a dry pan over medium heat until fragrant. Then soak in hot water until soft, drain and blend into a paste with a splash of water.
