Our recipe omits the usual Triple Sec while doubling the tequila, which we feel gives you more tequila flavour. We like to use a strong flavoured but sipable 100% Blue agave tequila, either blanco or reposado. You can also make it with mezcal for a smokier taste. Use fresh-squeezed lime juice and simple sugar syrup, you can’t go wrong.

- If you fancy a smokier tasting margarita try it with mezcal
- 500ml mezcal
- 250ml fresh lime juice
- 250ml sugar syrup
- Worm salt makes the best rim for mezcal.
- Make the sugar syrup as above but with 125ml water and 125g of sugar.
Additional details
- To make the sugar syrup put the sugar and water in a small saucepan and bring to a simmer, swirl the pan to ensure all sugar crystals dissolve, simmer about 1 minute, then cool.
- Add the tequila, lime juice and sugar syrup to the jug, stir, top up with ice.
- To salt the rims of the glasses, take a squeezed lime half and rub it on the outer and inner lip of your glasses, you can make a half or full rim, as you like. Pour the seasoning salt onto a saucer, turn your moistened glass upside down into the salt and push it around to get the salt to adhere to it.
- Then fill your glasses with about 4- 5 ice cubes, top with 100ml of the margarita, serve.
