Garbanzo - Chickpea salad with homemade vinaigrette

Delicious, nutritious and colourful salad. Great as a main dish, but same can be served as a side.

Improvise and have any leftovers you may have lying around, extra veg, cheese, etc!

Additional details

  • For salad:
  • 1 tin (approx. 400g) chickpeas
  • 1 tin (approx. 200g) sweetcorn (use fresh if in season)
  • 250g tomatoes
  • 1 avocado
  • Half cucumber
  • Half red onion
  • A bunch of your favourite herbs (we used mint and basil)
  • 1 lime juice
  • 2tbsp olive oil
  • 1tbsp honey
  • 1/2 tsp Dijon mustard
  • 1tsp Mexican Oregano
  • 1/2 tsp Guajillo chilli flakes
  • pinch of salt

Additional details

    1. In a bowl add drained chickpeas and sweetcorn.

    2. Cut tomatoes, cucumber and onion into a small cubes. Add to the bowl.

    3. Chop the herbs and add into the bowl.

    4. Add all the ingredients for vinaigrette into a small jar and shake well until all combined.

    5. Pour the vinaigrette over your salad and mix well.
