Garbanzo - Chickpea salad with homemade vinaigrette

Delicious, nutritious and colourful salad. Great as a main dish, but same can be served as a side.
Improvise and have any leftovers you may have lying around, extra veg, cheese, etc!
Additional details
- For salad:
- 1 tin (approx. 400g) chickpeas
- 1 tin (approx. 200g) sweetcorn (use fresh if in season)
- 250g tomatoes
- 1 avocado
- Half cucumber
- Half red onion
- A bunch of your favourite herbs (we used mint and basil)
- 1 lime juice
- 2tbsp olive oil
- 1tbsp honey
- 1/2 tsp Dijon mustard
- 1tsp Mexican Oregano
- 1/2 tsp Guajillo chilli flakes
- pinch of salt
Additional details
1. In a bowl add drained chickpeas and sweetcorn.
2. Cut tomatoes, cucumber and onion into a small cubes. Add to the bowl.
3. Chop the herbs and add into the bowl.
4. Add all the ingredients for vinaigrette into a small jar and shake well until all combined.
5. Pour the vinaigrette over your salad and mix well.
