Peas instead of avocados for a version of guacamole. Avocados are not that sustainable right now; air miles, deforestation and drug cartels muscling in on farmers who's profits soar as the world demand for avocados goes through the roof. We can all take a little break from the avocado and try to use a local ingredient instead, in this case the pea! It is green and can mash similarly to the avocado. When you add the other guacamole ingredients, it can also taste very similar too. It does lack the fat that avocados have so a little olive oil helps.

- 100g frozen peas
- 2 tsp of fresh lime juice
- 2 tsp shallot, minced
- 1/4 tsp salt
- 2 tsp of coriander stems, minced
- 2 tsp of jalapeños, minced
- dash of olive oil
Additional details
Place the frozen peas in a bowling cover with just boiled water, when defrosted, drain and place in a jug suitable for a stick blender, blend until you have a rough paste.
Place the shallots, lime and salt in a bowl and allow to macerate for 15 minutes or so or until the onion loses its sting.
The add the shallots and lime juice to the pea mash with the coriander stems, jalapeños and oil.
Stir and serve - this is approx 1 serve with totopos, 6g is a heaped tsp and 18g is about 1 tbsp.
