Tacos de Tuetano (Bone Marrow Tacos)

Roasted bone marrow, often described as “meat butter” works a treat spread over a warm corn tortilla with a sprinkle of salt, you can add salsa but there is something delicious about the simplicity of the unctuous marrow, corn and salt.

- 1 x 500g bone marrow, trough cut into two
- Cool Chile 12cm Taqueria Tortillas
Additional details
- Preheat the oven to 180°C fan.
- Place the marrows in a roasting tray, bone side down and season with a little salt.
- Bake in the oven for approx. 20 minutes until the marrows starts bubbling, you want to keep the marrow inside the bones to scoop out later.
- Once cooked, remove from the oven.
- Heat 1 tbsp of rendered fat from the marrow bone in a frying pan, heat, then toast both sides of the corn tortillas in the fat until warmed through.
- Scoop out the melted bone marrow and spread over your warm tortillas and season with a pinch of salt.
